Is there a term for writer’s block but for bakers? Baker’s block? Surely I can’t be the only one, but there are periods where I have no idea what to bake. I want to try something new but have no idea what flavors to combine or even what type of bake to create. The best thing to do in those periods: get a specific ingredient and challenge myself to get creative with it. No recipe in mind, just something sitting in the fridge and the question of what I can turn it into. Some of my favorite bakes have come from these little kitchen experiments!
This time, it started with a tub of cream cheese. I used some of it to make a Basque cheesecake, and it was absolutely delicious. But even after that, I was left with a pound of cream cheese and a cup of heavy cream. And how many cheesecakes can one person make? I also had extra mango puree from a chutney and lassi earlier that week.
Naturally, I started thinking about what would happen if I combined them all.
Enter these Mango Cheesecake Mousse Cups! 🥭
I blended the cream cheese with the mango to create a smooth, fruity cheesecake filling, then folded in whipped cream to give it that light, airy mousse texture. And because every good dessert needs a little something extra, I layered it all with buttery, caramelized Biscoff cookie crumble.
The combination is SO good. You get the tanginess of the cream cheese, the sweetness of the mango, and that warm, almost spiced flavor from the Biscoff. The mousse is creamy without feeling too heavy, and the cookie crumble adds just enough texture to keep every spoonful interesting.
I also love that these are served in individual cups. They look cute with practically no effort, and you can make them ahead of time and keep them chilled until you’re ready to serve. No oven, no water bath, no worrying about whether your cheesecake will crack. Just a few simple ingredients coming together to make something really delicious.
And honestly, that’s one of my favorite things about baking. Sometimes you don’t need a plan or a complicated recipe. You just need a few ingredients, a little creativity, and the willingness to see what happens.
These mango cheesecake mousse cups were exactly that, and they’re definitely going into my rotation for an easy, refreshing dessert!
Mango Cheesecake Mousse Cups
Ingredients
- 1 lb (16 oz) cream cheese, softened to room temperature
- 1 cup heavy whipping cream, cold
- ¼ cup granulated white sugar
- 1 tsp vanilla extract
- 1 cup mango nectar, plus more for topping
- 1/2 package (about 4 oz) Biscoff cookies, crushed
Instructions
- In a separate chilled bowl, whip the heavy cream until medium-stiff peaks form. The cream should hold its shape but still look smooth and fluffy. Set aside, in fridge ideally to keep cool.
- In a large bowl, beat the softened cream cheese and sugar until smooth and creamy. Add the mango nectar and vanilla extract, mixing until fully incorporated.
- Gently fold the whipped cream into the mango cheesecake mixture in two or three additions until combined. Try not to overmix so the mousse stays light and airy.
- In small serving cups, add a layer of cookie crumble to the bottom of each cup, followed by the mango cheesecake mousse. Finish with another sprinkle of Biscoff crumbs on top. Drizzle mango nectar on top if desired.
- Refrigerate for at least 3 hours, or until thoroughly chilled and set. Serve straight from the fridge and enjoy!
