Ginger Oatmeal Cookies

Ingredients

  • 1/2 cup butter
  • 1 cup sugar
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1 teaspoon ground ginger
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/4 cup honey
  • 3/4 cup quick-cooking oats
  • 1 1/2 cups all-purpose flour
  • 3/4 cup walnuts

Instructions

  • In a large mixing bowl with paddle attachment, cream butter and sugar until light and fluffy.
  • Beat in nutmeg, ground cloves, ground ginger, baking soda, and salt. Beat until well incorporated.
  • Add in salt, vanilla extract, egg, and honey. Beat for 1-2 minutes.
  • Gradually add in oats and flour to the mixture. Mix well.
  • Lastly add walnuts and allow them to incorporate into mixture.
  • With a cookie scoop, scoop dough into equal balls. Flatten the balls with a flat bottomed dish that is dipped in flour, taking care to gently remove the cookie dough from the dish if it does stick.
  • Place in freezer for 10 minutes to allow the cookie to keep it's form. Preheat oven to 350 F now so it will be ready when cookie dough is.
  • Bake at 350 degree F for 8-10 minutes until edges begin to brown.
