In a large mixing bowl with paddle attachment, cream butter and sugar until light and fluffy.
Beat in nutmeg, ground cloves, ground ginger, baking soda, and salt. Beat until well incorporated.
Add in salt, vanilla extract, egg, and honey. Beat for 1-2 minutes.
Gradually add in oats and flour to the mixture. Mix well.
Lastly add walnuts and allow them to incorporate into mixture.
With a cookie scoop, scoop dough into equal balls. Flatten the balls with a flat bottomed dish that is dipped in flour, taking care to gently remove the cookie dough from the dish if it does stick.
Place in freezer for 10 minutes to allow the cookie to keep it's form. Preheat oven to 350 F now so it will be ready when cookie dough is.
Bake at 350 degree F for 8-10 minutes until edges begin to brown.
