Alright guys. I’ve clearly been in a cookie obsession lately. I don’t know if it’s because it’s the season for cookies & baking or if it’s just my need for procrastibaking, but either way- it’s strong. I’ve been making batches of chocolate chip cookies and double chocolate cookies and basically anything & everything in cookie format. I’ve been making extra batches and storing the stashes in my freezer for cookie-related-emergencies. Well last night was no different. I started craving some ooey gooey deliciousness. The problem was that I wanted the classic delicious taste of chocolate chip cookies- but I also wanted something new, something better.
As I was trying to brainstorm some favorite ingredients to throw into a recipe, my friend must have gotten some serious mind reading skills. He showed up with a fresh cookie from chick-fil-a! Now I don’t think I’ve ever truly enjoyed a cookie from any type of restaurant/store, but the craving was strong & the intention was on point. Have any of you guys had a CFA cookie before? Because DAMN. That is one seriously amazing cookie. It was everything I love about chocolate chip cookies, but there was some oats and a sense of (honestly this is the only way I can explain it) a well rounded cookie. No joke. As soon as I finished my first bite, I already knew I had to try to and model my next batch after that cookie.
They turned out fantastic. Like fantastic enough that I’m bringing these home for Thanksgiving break & also keeping a special stash of them in my own freezer. Fantastic enough that I’m officially replacing my classic chocolate chip cookie obsession with these perfect drops of paradise. But of course, no need to take my word for it- whip up a batch and see how everyone gets completely HOOKED. Just don’t say I didn’t warn ya.
Elevated Chocolate Chip Cookies
Ingredients
- 1/2 cup unsalted butter room temperature
- 1/2 cup brown sugar
- 3 tbsp granulated sugar
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 & 1/4 cup All-Purpose flour
- 1/2 cup oats
- 1 egg
- 2 tbsp honey
- 1 tsp vanilla extract
- 1 cup semi-sweet chocolate chips + 1/4 cup for topping
- 1/2 cup chopped walnuts
Instructions
- Preheat oven to 350 F. Prepare baking sheet with parchment paper and set aside.
- In a large mixing bowl, place softened butter and both sugars. Mix together until combined.
- Add in baking powder, baking soda, oats, and flour. Mix together.
- Add vanilla, honey, and egg until mixture comes together.
- Finally, stir in chocolate chips and walnuts.
- Scoop spoonfuls of dough onto sheet, about 2 inches apart. With the remaining chocolate chips, place on top of cookie scoops to get that perfect cookie look.
- Place into fridge or freezer for atleast 15 minutes or until chilled.
- When ready, bake cookies for 8-12 minutes. Take them out when cookies are starting to brown on the edges but the center still looks slightly uncooked.
- Leave cookies in pan and allow them to cool for 5 minutes. Then remove from pan and enjoy your perfectly ooey-gooey cookies!
